And when the vine-ripe tomatoes hit the market in summer, there's no tastier pasta sauce than tomato and onion simmered with fresh basil. Start with a quickly made vegetable soup that gets a last-minute lift from lemon, and finish with a coupe of chilled sliced nectarines and berries. The timing: Make the soup first. While it's simmering, prepare the tomato-basil sauce. Put a large pot of salted water on to heat for the pasta while you sit down and enjoy the soup. Cook the pasta when you have finished your soup; it cooks in just a few minutes.
