8 dry manicotti noodles

16 ounces soft tofu

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

1 teaspoon freshly minced basil

2 teaspoons freshly minced garlic

1/3 cup freshly minced Italian parsley

salt

3 cups Marinara Sauce

fresh Italian parsley or basil for garnish

In a large bowl mix the tofu, oregano, thyme, basil, garlic, parsley, and white

pepper. Add salt to taste. Stuff the manicotti noodles with the filling and

place into a shallow 8 x 8-inch nonstick baking dish. Pour the Marinara Sauce
