Guest guest Posted August 7, 2000 Report Share Posted August 7, 2000 * Exported from MasterCook * Cabbage Stuffed with Mushrooms and Barley Recipe By :Eating in Eden - Hermine Freed Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup barley 1 large onion -- chopped 1 tablespoon olive oil 5 garlic cloves -- chopped 1 pound mushrooms -- coarsely chopped 2 tablespoons chopped parsley 1 tablespoon chopped dill 1 head green cabbage 2 large ripe tomatoes -- chopped 1/2 teaspoon cinnamon salt and pepper to taste 5 to 10 basil leaves -- chopped This is a very delicate dish, despite the intensity of cabbage. All of the ingredients blend magically together to make the strong mild and the mild more assertive. Cabbage is very nutritous, so having many recipes around keeps you from growing tired of it. Cook the barley in a pot of lightly salted water until soft, about an hour. Saute the onions in oil until transparent. Add the garlic and stir for a minute. Remove and reserve half of the onion-garlic mixture for sauce. Add the mushrooms to the pan and stir until soft. Add the herbs, seasonings, and cooked barley. Simmer for a few minutes more. Put the cabbage in a pot of boiling water and cook until the leaves get soft. Then, cut away the core of the cabbage and remove one leaf at a time, being careful not to break the leaves. Put a heaping tablespoonful of the barley-mushroom mix into the core side of each leaf and roll, folding in the sides. Secure with a toothpick or string. Meanwhile, add chopped tomatoes to a pan with the reserved onion and garlic and saute until the tomatoes are soft. Add the basil, cinnamon, and salt. Place half of the tomato sauce in the bottom of a shallow, non-stick baking pan, and place the cabbage rolls on top of the sauce. Put the remaining sauce, if any, on top of the rolls.
