Lemon Tart

1 recipe rolled oat pastry

zest of 1 lemon

juice of 1 lemon (about 1/2 cup)

1/2 cup apple juice

4 tablespoons maple syrup

1 tablespoon agar flakes

1/2 cup water

2 tablespoons arrowroot

1/2 pound silken tofu

2 tablespoons tahini (optional)

3 tablespoons maple syrup

3 tablespoons orange juice

 

Bake the pastry in a pie tin for about 10 minutes. Meanwhile, make the filling.

Remove the zest from a lemon before juicing it and grate in a food processor.

Put the lemon juice, the apple juice, and the 4 tablespoons of maple syrup into

a small pot with the agar flakes. Brring to a slow boil, stirring until the

agar dissolves. Mix the arrowroot with water until dissolved and add to the

pot, stirring uuntil the mixture thickens. Add the zest and cook for a minute

more. Add the mixture to the baked crust and chill. Mix the tahini (optional),

the 3 tablespoons maple syrup, and the orange juice in a processor and add to

the tart once it has set.
