Bechamel Sauce with Soy Milk (Saltsa Bessamel me Soyia)

10 tablespoons wholewheat pastry flour

8 tablespoons butter or margarine

1 pint soy milk

1 pint hot water -- mixed with the soy milk

3 whole eggs

1 egg yolk

6 tablespoons grated hard cheese

sea salt and freshly ground black pepper

 

Place the flour and butter in a nonstick frying pan over medium heat. Mix to a

smooth consistency and add the mixed soymilk and water, stirring continuously.

The final consistency should be thick but not solid (add a little more soymilk

mixed with water if necessary). Remove from the heat and add the eggs, cheese,

salt and pepper and mix well. The above quantities will make a pie or moussake

to serve 4 to 6, depending on what else you are serving with it.
