Diporto's Greek Villager's Salad (Horiatiki Salata)

Amount Measure Ingredient -- Preparation Method

3 large firm ripe tomatoes

1 large red onion -- peeled

1 small cucumber -- peeled & sliced into 1/8 " rounds

1 large green pepper -- seeded, halved & cut into thin rounds

1 long thin hot green pepper -- (to 2) seeded & cut into

thin rounds

1/2 cup kalamata olives

1/4 cup extra virgin olive oil

salt to taste

2 pinches dried oregano -- (to 3 pinches)

1/3 pound feta cheese -- (optional)

 

Wash and dry the tomatoes. Cut them in half lengthwise, core them, and cut each

half into thirds or quarters. Cut the onion the same way, halved and then into

chunky wedges.

 

Toss the tomatoes, onion, cucumber, peppers, and olive together in a serving

bowl. Add olive oil, salt, and oregano, and serve immediately.

 

OPTIONAL: Crumble a little feta over the salad just before serving.

NOTES : Villager's Salad is the classic Greek salad -- ripe tomatoes, sliced

onion, crunchy peppers and cucumbers, kalamata olives, feta, and extra-virgin

olive oil. Diporto is a small taverna, open for lunch only, on the perimeter of

the Athens Central Market. The cook and owner, Mitso, prepares all the classics

of simple country Greek fare, as well as the best horiatiki salata in the city.

His secret: the unabashed addition of hot green peppers.
