I know how to cook low-fat but am in a quandry over how to cook " low carb " Could someone give me a sample week's menu that they follow and any advice that has helped them with their diet. Please send to me too... the way to cook no carbs is not to eat bread, rice, pasta.... none of it... no sugar, corn, potatoes, etc. NO BREAD... nothing but eggs (unless you're vegan) and veggies... I did it for a month and lost like crazy, but then I was going nuts so I stopped. I also need to figure out how to cook no carb... It's hard. They recommend MEAT instead... of course, that doesn't work for us. Also, fruit is quite forbidden because of the natural sugars... so it's tough. I hope we figure this out! You are right about the bread, pasta, but also rice. Also the sugar, corn, potatoes, but also sweet peas and carrots. And yes you must be careful with all fruits. And all beans and nuts you should also be careful with. But did you know there are low carb breads out there??? Soy flour can be used for a lot of things in place of SOME of the flour, but it doesn't work the same as regular flour. It has only 9 carbs for 1/4 cup compared ot 22 for most other flours. I have not tried using it as a thickener, but intend upon trying it for many things in the near future. And use of cream instead of milk in your cooking and baking will help a lot too as milk has all the carbs and cream has all the fat. When I made the best progress with my diabetes, I was eating fresh veggies and a cheese sandwich made out of the low car bread. Very boring lunch, but it filled me up because I wasn't real careful about how many fresh veggies I was eating. I always used a dip for them too to make it more enjoyable. Ranch dressing works good, but you will not want the fat free as it has more carbs - they take out the fat and add carbs. So if you can't handle being on low carb for long, why not try it for a couple of weeks, then be very careful for a week and then go back to it. That should show some improvement. And by all means, being careful doesn't mean you can't have potatoes. I have ALWAYS been the kinda person that thinks mashed potatoes and gravy is DESSERT!!! I could eat an entire plateful!!! Now I have them about once a month or so but only a little bit. I'm still happy (mostly) but I'm working at it too. It's not about NO carbs, it's about reducing them significantly. I hope this helps everyone. If I find any veggie recipes that are easy, great and would help you, I will send them in. I will look through my files for some now. I do hope this helps you.
