Pecan Pie with Pinto beans

Donna requested a pecan pie made with pinto beans on one of my list that was

from weight watchers well I asked around and so far got 3 pecan pinto pies From

Nancy but not from weight watchers. The pies range from 4-8 points a slice but

this can be reduced even more if you use Splenda instead of sugar. These

recipes all call for at least 1 cup of sugar and that is 16 points alone

(divided into 8 slices that is 2 points a slice right there) And since splenda

is a ZERO calorie, Zero fat per serving you knock off 2 points per slice at

least :) And you can bake with splenda unlike some of the other low cal

sweetners. So If you feel adventureous try it :)

Amount Measure Ingredient -- Preparation Method

3 cups pinto beans, cooked -- unseasoned

and mashed fine

4 eggs

1 1/2 cups sugar

1/2 cup 2% milk

2 tablespoons butter

1/4 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1/2 teaspoon allspice

1/2 cup pecan halves

1 pie crust, frozen

 

Mix all the ingredients well. Place in an unbaked pie shell, top with pecan

halves, and bake in a moderate oven (350°F) until done. This is a dessert that

is more than likely good for you.

 

JENN'S LOWER FAT NOTES: Use 1 cup egg beaters instead of the 4 eggs, use skim

milk instead of 2%, and use only 1 cup sugar instead of 1 1/2 cups.

Amount Measure Ingredient -- Preparation Method

1 can canned pinto beans -- #2 size

(no-seasoning)

1 cup sugar

3 egg yolks -- beaten

1 cup 2% milk

1 teaspoon vanilla

1 teaspoon nutmeg

1/2 cup coconut

1/2 cup chopped pecans

1 pie crust, frozen

 

Combine ingredients and place in uncooked pie crust. For a smoother filling,

mix in blender (or mash well) until smooth. Bake at 350º for 30 minutes or

until set. If desired, make meringue with leftover egg whites, spread over pie

(when done) and

brown in oven.

1 cup brown sugar

1/2 cup reduced-calorie margarine

1/2 cup Egg Beaters® 99% egg substitute -- beaten

1 pie crust, frozen

 

This pie tastes like Pecan pie and can be served with whipped cream, non-dairy

whipped topping or a scoop of ice cream. Blend sugars, eggs and butter until

creamy. Add pinto beans and blend well. Pour into 9 inch unbaked shell. Bake

at 375 F for 20 minutes, then at 350 for an additional 25 minutes or until

inserted knife comes out clean.
