Mix all the dry ingredients together. Whip in the soy milk and mustard, and pour into an oiled loaf or souffle pan. Bake for 45 minutes or until browned. Serves 3 to 4 Soy " Souffle " was an entree we served often on the early Farm, making as many seasonal variations as we could come up with. It is easy-to-make and hearty. It fluffs up but falls very fast! This is the basic souffle. This recipe is adapted from The New Farm Vegetarian Cookbook. - - - - - - - - - - - - - - - - - - - Per serving: 165 Calories (kcal); 8g Total Fat; (41% calories from fat); 13g Protein; 12g Carbohydrate; 0mg Cholesterol; 196mg Sodium Food Exchanges: 1/2 Grain(Starch); 1 1/2 Lean Meat; 0 Vegetable; 0 Fruit; 1 Fat; 0 Other Carbohydrates Nutr.
