Soy " Souffle "

1 cup soy flour

1/4 cup nutritional yeast

1/2 teaspoon turmeric

1/4 teaspoon salt

1 1/2 cups soy milk

1 tablespoon salad mustard

 

Preheat the oven to 350F.

 

Mix all the dry ingredients together. Whip in the soy milk and mustard, and

pour into an oiled loaf or souffle pan. Bake for 45 minutes or until browned.

Serves 3 to 4

 

Soy " Souffle " was an entree we served often on the early Farm, making as many

seasonal variations as we could come up with. It is easy-to-make and hearty.

It fluffs up but falls very fast! This is the basic souffle. This recipe is

adapted from The New Farm Vegetarian Cookbook.
