Kamut Waldorf Salad

Amount Measure Ingredient -- Preparation Method

2 cups cooked kamut

OR other whole grains of your choice

1 apple

cored and cut into bite-size pieces

1 large orange

cut into bite-size pieces

1 small fennel bulb or 2 stalks celery

cut into 1/2-inch pieces

1/4 cup golden raisins

1/4 cup chopped fresh flat-leaf parsley

1/4 cup fat-free mayonnaise

2 tablespoons Dijon mustard

2 tablespoons lemon juice

1 teaspoon fennel seeds

 

Combine all ingredients in a serving bowl and toss to coat.

 

Yield: 6 to 8 servings, calories: 182, fat: 1g, fiber: 13g.
