And I must mention a truly good organic energy bar - Bumble Bars - I received an entire box via UPS yesterday. They even have flax seed! And they're vegan. On the web at www.bumblebar.com * Exported from MasterCook * Tofu Tiramisu Recipe By :Soyfoods Cookery - Louise Hagler Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 recipe Sour Soymilk Cocoa Cake 2 cups Soy Yogurt Cheese 1 10.5 oz package firm silken tofu 1 cup sweetener of choice 1 teaspoon vanilla 1/2 cup water 4 tablespoons grain coffee crystals 1 teaspoon coffee extract (optional) semi-sweet chocolate curls Prepare half a recipe of Sour Soymilk Cocoa Cake and bake in a 9 x 13-inch cake pan or two 8-inch round pans for 25 to 30 minutes. In a food processor or blender, blend the soy yogurt cheese, tofu, sweetener, and vanilla together until smooth and creamy Cut the rectangular cake in half vertically and horizontally, or cut the rounds in half horizontally to make four equal layers. You can also cut the cake to fit a trifle bowl or individual serving dishes. You will need 4 equal layers of cake for each dish. Mix together the water, grain coffee, and coffee extract. Brush one side of the bottom cake layer with about 1 tablespoon of the coffee liquid, and place the brushed side down on a platter or in a serving bowl. Brush the top of that cake layer with another tablespoon of the coffee liquid. Pour 1/4 cup of the soy yogurt cheese and tofu mixture over the first cake layer and spread evenly. Repeat the layering for the next 3 layers. Cover and refrigerate for 24 hours or more for the flavors to meld.
