okra pods, fresh with stems

an oven or sunlight

 

The okra stems should not be cut off. They should be trimmed to a point, but

not so close to the vegetable that the gel will ooze out once cooking begins.

 

Dry the washed pods in the oven for 2 hours on low (or in the bright sun)

before beginning the cooking process.

 

The author visited various people and took notes on the meals they served

during the years of his training in Israel to become a rabbi. It was a very

interesting and informative book and the recipes presented are the

americanized versions of the foods his hosts served while staying as close to

the originals as possible.

 

This info. came from a book whose title I can't find called something like,

" Jewish Sephardic Cooking in the Mediterranean " , by Rabbi ?

 

If I am mistaken about the author of the okra stem trimming and oven drying

methods you'll have to forgive me as I can't locate the file.
