Amaranth-Walnut Patties

Amount Measure Ingredient -- Preparation Method

1/2 cup amaranth -- washed and drained

1 1/2 cups water

1/8 teaspoon sea salt

8 ounces tofu -- mashed

2 tablespoons soy sauce

1 tablespoon chickpea rice miso

CREAMED IN 1 tablespoon water

4 scallions -- finely minced

2 garlic cloves -- crushed

1/3 cup walnuts -- chopped

1 teaspoon ground coriander

2/3 cup quick-cooking oats -- or more if desired

2 tablespoons safflower oil -- for browning

 

*This recipe calls for 1 to 2 tablespoons safflower oil. Adjust to your needs.

 

In a small saucepan, bring water, amaranth and salt to boil. Cover and simmer

on medium high for 20 minutes or until all water has evaporated. Transfer

cooked amaranth into mixing bowl and allow to cool.

 

Combine remaining ingredients, expect oil, with cooked grains blend thoroughly.

Mixture should be sticky enough to hold patties together. Add oil to large

heated skillet. With moist hands, form 8 medium-sized patties and brown on

medium high for 8 to 10 minutes on each side.

 

Makes 6 to 8 patties.
