Toasted Sesame and Spinach Balls

1 bunch fresh spinach, chard, or kale -- stemmed

1/4 cup sesame seeds -- toasted

1/4 cup plain rice vinegar

2 tablespoons low-sodium soy sauce

pinch grated fresh ginger

 

If using kale, trim the leaves away from the thick stem. In a covered steamer

or saucepan, steam the leaves over boiling water for 2 minutes, or until limp.

Let cool, then squeeze the moisture from thhe leaves and press them into balls.

Roll each ball in the toasted sesame seeds. Mix the vinegar, soy sauce, and

ginger in a small bowl. Drizzle the dressing over the balls just before

serving. makes 2 to 4 servings
