Leek Wraps

2 large leeks, white part only

2 tablespoons olive oil

1 tablespoon black mustard seed

1 onion -- finely chopped

1/4 teaspoon ground coriander

1 teaspoon fresh lemon juice

3 tablespoons capers -- drained

3 large flour tortillas

1/4 cup chopped fresh parsley

 

In a covered steamer or saucepan, steam the leeks over boiling water until

tender, about 5 minutes. Let cool and dice.

 

In a medium skillet, heat the oil over high heat. Add the mustard seed and cook

until popped, but not burned. Add the onion and cook until tender, about 2

minutes. Stir in the coriander, lemon juice, capers, and leeks. Cook for 3

miinutes, stirring to blend.

 

Warm tortillas for 2 minutes in a 425F oven. Keep covered with a damp cloth

until ready to use.

 

Lay the tortillas flat on a work surface. Spread one third of the leek mixture

on each tortilla and roll tightly into a tube. Cut crosswise into 1-inch

lengths. Arrange on a platter and garnish with parsley.
