Guest guest Posted September 15, 2000 Report Share Posted September 15, 2000 * Exported from MasterCook * Corn Pappardelle With Fresh Roasted Corn & Poblano Chile Sauce Recipe By :Chef Mathew Besse-Brewer, Café de las Placitas, Placitas, New Mexico Serving Size : 4 Preparation Time :0:00 Categories : Entree ovo-lacto Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CORN PAPPARDELLE - EQUAL AMOUNTS: whole eggs masa harina semolina flour all-purpose flour FRESH ROASTED CORN & POBLANO CHILE SAUCE: 1/4 cup olive oil 2 tablespoons chopped garlic 1 tablespoon chopped shallot 2 cups vegetable stock 1/2 cup roasted -- seeded, and chopped 2 cups roasted fresh corn 1 tablespoon crushed -- toasted cumin seed 2 cups chopped fresh tomatoes 2 tablespoons soft butter 2 tablespoons chopped cilantro 1 lime juice of salt and pepper to taste 1/2 cup toasted pine nuts for garnish 1 cup grated romano cheese for garnish Corn Pappardelle: Beat eggs lightly and mix in enough masa harina and semolina flour to form a firm dough. Roll the dough very thin and cut into 1 " x 12 " strips. Blanch in hot water and chill. Roasted Corn & Chile Sauce: In medium to large pan, heat oil over medium heat. Sauté garlic and shallot and add enough vegetable stock to prevent excessive browning. Add chile, corn, cumin, tomatoes and remaining stock. Reduce, uncovered, by half. Turn off heat and add butter, cilantro, and lime juice, stirring frequently until butter melts. Adjust seasonings with salt and pepper. Reheat pappardelle pasta in water and strain. Toss pasta with sauce and serve. Garnish with pine nuts and Romano cheese.
