Noodles Romanoff

1 pound flat noodles

1 onion -- chopped

2 cloves garlic -- minced

1/4 cup oil

2 cups soy milk

1 1/2 scoops Genisoy Natural Protein Powder (1/4 cup

plus 2 T)

1/2 pound tofu

1 cup chopped fresh parsley

6 tablespoons soy Parmesan

salt, to taste

 

Boil the noodles in salted water until al dente, and drain.

 

Preheat the oven to 350F.

 

Saute the onion and garlic in the olive oil until translucent.

 

Blend the soymilk and protein powder in a food processor or blender until smooth

and creamy. Combine all the ingredients, and pour into a 2-quart baking dish.

Bake for 15 to 20 minutea. Serve hot with more soy Parmesan on the side, if you

like.

 

Note-while this recipe doesn't say what, specifically, to do with the tofu, I'll

put in the blender with the soy milk.
