Guest guest Posted September 25, 2000 Report Share Posted September 25, 2000 * Exported from MasterCook * Drunken Beans (Frijoles Borrachos) Recipe By :Meatless Mexican Home Cooking, Nancy Zaslavsky Serving Size : 8 Preparation Time :0:00 Categories : Meatless Mexican Home Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound pink or pinto beans -- (dried) 2 tablespoons vegetable oil 1/2 cup chopped onion 1/2 cup chopped bell pepper 1/2 cup chopped milk banana or Hungarian chile -- stemmed but not seeded (plus 1-2 spicy yellow wax chiles if desired) 3 cloves garlic -- chopped 1 tablespoon cumin seed 3 tablespoons ancho chile powder 8 cups water 3 tablespoons grated piloncillo (panela) or dark brown sugar 1 12 oz bottle Dos Equis beer 1/3 cup chopped cilantro 1 tablespoon kosher salt 8 grinds black pepper Pick through the beans, removing any pebbles, and rinse. Heat the oil in a large pot and add the onion. Saute until the onion is transparent, then add the bell pepper, chile, garlic, cumin, and chile powder. Stir for another few minutes to lightly brown the ingredients. Add the beans, water, and piloncillo (or brown sugar). Bring to a boil, then reduce the heat and simmer, covered, for about 2 hours, or until the beans are barely tender. Add the beer and continue to simmer, uncovered, for 20 minutes. Add the cilantro, salt, and pepper, and simmer for 10 minutes longer. Taste for seasoning.
