Make-Ahead Moussaka

TOMATO SAUCE:

1 tablespoon olive oil

1 cup chopped onion

4 cloves garlic -- finely chopped

1 pound tofu -- finely chopped

2 8 ounce cans tomato sauce

1 teaspoon dried basil leaves

1/2 teaspoon dried oregano leaves

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon ground black pepper

CREAM SAUCE:

1 pint half-and-half

1/4 cup all-purpose flour

1/2 teaspoon salt

2 1 pound eggplants

2 tablespoons olive oil

1/2 cup grated parmesan cheese

1/4 cup crumbled feta cheese

2 tablespoons unseasoned dried breadcrumbs

 

Prepare Tomato Sauce: In 4-quart saucepan heat oil over medium-high heat. Add

onion and garlic and sauté, stirring, until they begin to brown. Stir in tofu,

tomato sauce, basil, oregano, cinnamon, salt and pepper. Bring to a boil; simmer

10 minutes.

 

Prepare Cream Sauce: In a 1-quart saucepan, beat together half-and-half, flour,

and salt. Bring to boiling over medium heat, stirring constantly. Set aside.

 

Heat broiler: Slice egg plant crosswise 1/4-inch thick. Brush with 2 tablespoons

olive oil. Broil 4 inches from heat source, 4 minutes per side, until browned.

 

Preheat oven to 375 degrees. In a shallow 2-quart baking dish arrange half of

eggplant in overlapping rows. Top with half of Tomato Sauce and half of cheeses.

Repeat layering eggplant and sauce. Top with Cream Sauce, cheeses, and bread

crumbs. (At this point, moussaka may be wrapped and refrigerated for up to 8

hours before baking.) Bake 35 minutes until bubbly and golden. Cut into 12

rectangles to serve.
