Guest guest Posted September 27, 2000 Report Share Posted September 27, 2000 * Exported from MasterCook * Potato Goulash Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 130 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Potatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds medium red potatoes -- (about 8), cut in half lengthwise and then cut into 1/4-inch-thick slices 1 onion -- chopped 2 cloves garlic -- minced 2 tablespoons sweet paprika 1 teaspoon caraway seeds 1 teaspoon dried oregano 28 ounces canned Italian plum tomatoes undrained and broken up 2 teaspoons bouillon granules or 2 bouillon cubes 2 cups cooked barley OR other whole grains of your choice Combine all ingredients except the grains in a large pot. Bring to a boil, reduce heat and simmer, covered, 30 to 40 minutes or until the potatoes are tender, stirring occasionally and adding water if needed. Serve over whole grains.
