Guest guest Posted September 28, 2000 Report Share Posted September 28, 2000 * Exported from MasterCook * Coconut Rice Pudding ( pressure cooker recipe ) Recipe By : Serving Size : 3 Preparation Time :0:00 Categories : Desserts Pressure Cooker Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup basmati rice 1/2 cup water 1 can Thai coconut milk 2 teaspoons ground cinnamon 2 tablespoons sugar Wash rice to remove excess starch. Drain. In a 2 qt or larger pressure cooker over high heat, add rice,water, coconut milk,sugar and cinnamon. Stir constantly until the mixture begins to boil to prevent scorching. Cover cooker and bring pressure up to the first ring over high heat. Immediately adjust heat to stabilize at the first red ring. Cook 8-9 minutes. Use cold water release method ( quick release ).
