Guest guest Posted September 30, 2000 Report Share Posted September 30, 2000 * Exported from MasterCook * Pierogi with Caramelized Onion & Brussels Sprouts Recipe By :Fall's Bounty Serving Size : 4 Preparation Time :0:00 Categories : !Good Housekeeping Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 19 ozs frozen potato-and-cheddar pierogi 2 tbsps olive oil 1 lb onion -- cut in half and thinly sliced 2 tsps sugar 3/4 tsp salt 20 ozs Brussels sprouts -- trimmed and thinly sliced 1 c vegetable broth 1/4 tsp coarsely ground black pepper 1/4 c walnuts -- toasted and chopped In large saucepot, prepare pierogi in boiling water as label directs. Meanwhile, in nonstick 12-inch skillet, heat oil over medium heat until hot. Add onion, sugar and 1/4 tsp salt, and cook 20 minutes or until onion is tender and caramelized, stirring occasionally. Increase heat to medium-high; add Brussels sprouts, broth, black pepper, and remaining 1/2 tsp salt; cover and cook until Brussels sprouts are tender, about 8 minutes, stirring occasionally. Drain pierogi; toss with onion mixture and chopped walnuts.
