Broiled Tomatoes with Feta Cheese - TNT

Amount Measure Ingredient -- Preparation Method

2 medium ripe tomatoes -- firm

2 ounces feta cheese -- to 3 oz.

2 teaspoons fresh oregano -- chopped

or basil leaves

or several pinches dried Greek oregano

2 teaspoons virgin olive oil

freshly ground pepper

 

Preheat the broiler. Slice the tomatoes into rounds, a little less and 1/2

inch thick, and overlap them in a baking dish. Crumble the cheese over the

top, add half the chopped herbs, and drizzle over a teaspoon of the olive

oil. Place the dish in a few inches below the heat source and broil until

the cheese is melted and starting to brown, about 7 minutes. Remove dish

from oven, drizzle the remaining oil over the top, and the rest of the

herbs, and serve with a twist of black pepper.

 

*Feta cheese is salt enough hat extra salt probably isn't necessary.

NOTES : These can be ready, from start to finish, in about 10 minutes. The

feta cheese is sharp and tangy and make even so-so tomatoes taste pretty

good. This would be a fine accompaniment to a lunch or dinner

omelet. Makes 2 servings.

Brenda's Notes: Made 10/1/00. Good. Have French bread on hand for dunking

into the juices. We both liked this a bunch. Think next time will add some

fresh or roasted garlic and some lemon zest, just to perk up the flavors

more. However, as-is was wonderful. Pretty too.
