Guest guest Posted October 7, 2000 Report Share Posted October 7, 2000 * Exported from MasterCook * The Perfect Banana-Bulgur Porridge Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 bananas -- peeled and mashed 1 egg -- lightly beaten 1 tablespoon maple syrup 2 teaspoons cornstarch 1/2 teaspoon vanilla extract 1/4 teaspoon ground nutmeg 1/4 teaspoon cinnamon 1/2 cup bulgur 2 cups skim milk -- or soy milk 1/2 ounce toasted almonds -- slivered Preheat the oven to 325 degrees. Place bananas in a medium-size saucepan. Add the egg, maple syrup, cornstarch, vanilla, nutmeg and cinnamon, and stir well. Add the bulgur, then gradually stir in the milk. Bring to a boil over medium-high heat, stirring constantly for one minute or until well blended and thickened. Transfer the porridge to a 1-quart baking dish and bake 25 minutes or until set. Stir the porridge, divide it among four bowls and top each portion with almonds.
