Flaming Firehouse Chili

Recipe By : The Vegetarian Chili Cookbook, by Robin Robertson, page 65

Serving Size : 6 Preparation Time :0:00

Categories : Beans And Legumes Soups And Stews

Soyfoods Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 tablespoons olive oil

1 cup chopped onion

2 garlic cloves -- minced

12 ounces cooked ground beef alternative -- see note

28 ounces canned whole tomatoes -- chopped

4 tablespoons hot chili powder

(see separate recipe)

1 teaspoon ground cumin

1 teaspoon salt

1 1/2 cups hot salsa

1 cup water

3 cups cooked kidney beans

There are nearly as many recipes for firehouse chili as there are

firehouses. The versatility and ease of preparation of this one-pot meal

makes chili a perennial favorite among firehouse cooks. Serve this one

with cornbread, and offer a choice of toppings.

Heat the oil in a large chili pot over medium heat. Add the scallions and

garlic, cover, and cook until softened, about 5 minutes. Add the ground

beef alternative, tomatoes, chili powder, cumin, salt, salsa, and

water. Bring to a boil, lower the heat, and simmer 30 minutes, stirring

occasionally. Add the kidney beans, and simmer 15 minutes longer to heat

through and blend flavors. Add more water, if necessary, until desired

consistency is reached.

Note: Such as Morningstar Farms Burger-Style Recipe Crumbles or Green Giant

Harvest Burgers for Recipes. Both come in 12-ounce packages and are

" precooked " or already browned.
