Cherrie: Here are a couple for you. The first one was originally posted by

Brenda Adams. I haven't tried either one. Also, I'm not postive, but you might

want to check won ton and other wrappers -- some of them are egg-free.

Egg Roll Wrappers/Pot Sticker Skins (Electric Press)

Amount Measure Ingredient -- Preparation Method

2 cups unbleached flour -- or all-purpose

-- flour

3/4 cup boiling water

1 tablespoon sesame oil -- , up to 2

OR vegetable oil -- (to brush dough)

 

Place flour in processor bowl, add boiling water slowly through feed tube until

dough forms a ball. Cover ball with plastic wrap and let rest at least 30

minutes. With hands, roll into a 15 inch long log, and cut into 24 equal

pieces. Keep covered with plastic wrap. Roll each piece of dough into a ball

and flatten to about 2 inches. Brush one side of each round evenly to edges

with oil; place oiled surfaces together and press the two rounds firmly

together. Place double round on Tortilla Chef, close and press down lever

quickly and open. Bake for a few seconds and turn over and bake a few seconds

more. Do not overcook. Pull the two halves of the pancake apart after

cooking. Stack on a plate and keep covered with cotton towel to keep warm.

Makes 24 servings.

MC-Recipe. I use this recipe for pot stickers. The recipe came with my

electric tortilla press (which I hear is also great for making flat breads). I

suspect you can do much the same with a frying pan. Experiment. :)

 

Note: The booklet says that this recipe can be used for Mo Shu, Mandarin

Pancake (they make one like a Cannelloni) or any recipe that calls for egg roll

wrappers or pot sticker skins.

Momo Wrappers

Amount Measure Ingredient -- Preparation Method

2 1/2 c Flour

1/4 ts Baking powder

1 pn Salt

3/4 c Water

 

Pour flour in a mound on the counter. Make a whole in the centre.

Sprinkle in salt & baking powder. Add 1/2 the water & with your hand, mix

the water & the flour. Add the rest of the water & continue to work until

the dough is smooth. Knead well for 5 minutes. Cover & set aside for 30

minutes.

 

Knead dough on well floured surface. Roll into a long sausage shape about

1 " in diameter. Cut into pieces 1 " wide. Dust with flour & flatten each

piece into a round. Roll each round with your hands until you have a

perfect circle of 3 " to 3 1/2 " & the thickness of a coin. Fill with the

filling of your choice.
