Tempeh " Sloppy Joes "

Amount Measure Ingredient -- Preparation Method

2 tablespoons safflower oil

1 medium onion -- finely chopped

1/2 medium green bell pepper -- finely chopped

1 package tempeh -- finely crumbled

1 1/4 cups tomato sauce

1 tablespoon chili powder -- up to 2, to taste

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1 tablespoon soy sauce -- or to taste

1 teaspoon honey

whole wheat rolls or pita bread

shredded lettuce

 

Serves: 4

 

Heat the oil in a skillet. Add the onion and saute until golden. Stir in

the green pepper and tempeh and saute over medium heat, stirring

frequently, until the tempeh is lightly browned. Add the remaining

ingredients, stir together well, and simmer over low heat for 8 to 10 minutes.

 

Tempeh Tacos: Serve in crisp taco shells with shredded lettuce and, if

desired, shredded cheese or soy cheese.

 

A staple food of Indonesia, tempeh (pronounced tem-PAH) is slowly gaining

in popularity in the West, much as tofu did before it. But whereas tofu is

soft and bland tempeh is somewhat nutty and slightly fermented. It is an

even more concentrated source of protein than tofu and is a bit more

exotic, if somewhat less versatile.

 

To make tempeh, cooked soybeans are spread on trays and inoculated with

beneficial mold cultures. As the mold multiplies and ferments, the

soybeans bind together into firm cakes.

 

Tempeh cakes are readily available in the refrigerator sections of natural

food stores, where they come in 10- or 12- ounce packages. Tempeh is a

ready-to-use food and lends itself to many quick and easy

preparations. Like tofu, it is commonly used as a meat substitute and

analog, in preparations such as Tempeh " Sloppy Joes. " If you like the

unusual flavor and texture of tempeh you will find it a useful staple food.
