I'm posting recipes from this cookbook this week -- The Clueless Vegetarian by

Evelyn Raab. Though it doesn't specifically say so, it seems to be geared

toward teen vegetarians. I liked Ms. Raab's last cookbook so well, I thought

this one would be good too (and it is!). Her last cookbook is a beginning

cookbook for teen's " Clueless in the Kitchen " (not all vegetarian, but many veg

recipes). The recipes in both books are easy, and Ms. Raab has a great sense of

humor.

Spicy Oriental Asparagus Salad

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds fresh asparagus -- trimmed & cut into 2 " pieces

1 tablespoon red chile paste

2 tablespoons sugar

2 tablespoons vinegar

2 tablespoons sesame oil

1 teaspoon salt

3 tablespoons vegetable oil

6 cloves garlic -- cut into slivers

 

Place asparagus pieces in a steamer basket over boiling water and steam for 2-3

minutes or just until they turn bright green, but before they begin to get soft.

Dump into a strainer and run cold water over to stop them from cooking further.

Let them drain.

 

In a small bowl, combine the chile paste, sugar, vinegar, sesame oil, and salt.

Set aside.

 

In a wok or large skillet, heat the vegetable oil over high heat. Add the

garlic slivers, stir-fry for no more than 1 minute, then add the chile paste

mixture. Remove from heat and add the asparagus, tossing to combine well.

 

Chill completely before serving.
