Marinated Tofu (for salads or pasta)

How about marinated tofu for salads (although I'm thinking of adding it to

pasta too, because it reminds me of herbed cream or ricotta cheese). I

adapted the recipe I saw in ads for Nasoya in vegetarian magazines.

 

Marinated Tofu for Salad

Serves 4 - 6

 

1 16-oz firm or extra firm tofu, drained, pressed (to remove excess

moisture), cut into 1/2 inch cubes

 

Marinade:

 

Mix together:

1/4 cup extra virgin olive oil

2 - 4 tablespoons favorite vinegar*

1 tsp. salt

1 -3 tsp. favorite salad herbs**

1 - 1 1/2 tsp. garlic granules/powder

1/2 - 1 tsp. onion granules/powder

1/2 tsp fresh ground black pepper

 

Pour the marinade over the cubed tofu. Marinade for at least 10 minutes***,

stirring occasionally.

 

Add marinated tofu, undrained, to salad, toss and serve. Salt and pepper to

taste.

 

 

* I've used balsamic, red wine, white wine with tarragon, and cider vinegar

at different times and have loved them all

 

** The original recipe called for 1 tsp. basil and 1/2 tsp. oregano (and

didn't include garlic, which I thought was a terrible oversight). However,

I have used other herb combinations and I like more herbs than the 1 1/2 tsp

(combined) than the original recipe called for. I loved the tarragon I

tried in one marinade, the Italian salad herbs I tried in another, and

salt-free Spike (one of my favorite seasonings in general) in another.

 

*** I discovered, by accident, that I really prefer the flavor of marinating

overnight. That flavor also gave me the idea of using it in pasta dishes,

especially lasagna or stuffed pasta shells.

TOFU

 

Hey its Beth again! Just wanted to get some feedback on any interesting tofu

recipes anyone has. I'd like some easy ones that use veggies maybe? I don't

know i am just bored with the same old stuff! Any ideas for me? Thanks in

Advance!
