Vegan Key Lime Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 containers Tofutti Better Than Cream Cheese (plain) -- (8 oz.) 2 tbsp soy milk 1 cup natural sugar 1 tsp vanilla 2 tsp grated lime peel 4 tbsp lime juice 2 tbsp cornstarch 1 9 inch graham cracker crust sliced strawberries Preheat oven to 350 degrees. Blend cream cheese, soymilk, sugar, vanilla, grated lime peel, lime juice and cornstarch until smooth. pour mixture into graham cracker crust, place on baking sheet and bake for 40 minutes. I had a few non-vegan friends try it and they couldn't believe it is animal- free. By my calculations, the whole pie has 16 grams of fat - about 2 grams per slice. I really love vanilla, so I put a little extra and a tad more turbinado sugar. Simply amazing. Graham crackers are sweet, brown crackers. In the US, they make a treat called S'mores with them by placing a marshmellow and chocolate on a graham cracker over a campfire. Too bad marshmellows are not vegan or vegetarian for that matter. I heard there is a vegan brand of marshmellows, but don't know what it is. FYI- I had a hard time finding a graham cracker crust over here without dairy. A lot of them also contain honey, so watch out if you don't eat those things. If you can't find a graham cracker crust or equivalent in the UK, I would recommend mashing up some vegan cookies (ginger snaps would work nicely) and making your own crust.
