There was a very interesting article on www.davidicke.com - it was a link to another site, but if you go to the search facility on the site, type in " mad cow disease " or " BSE " , you should find quite a few good articles. The one I particularly remember was about a 30 year experiment carried out at the start of the 20th century whcih proved that wel looked after animals wouldn't catch it!
