does anyone know if tofu is considered raw, and if so, what brands sold might be

considered " raw " ? mainly i'm curious about mori-nu tofu. i was wondering since

it's in that asceptic/shelf-ready packaging.

There is nothing in asceptic/shelf-ready packaging worth buying as food that

I can think of. Moreover a lot of vegetables from shops are grown in dead

soil and the fruit is hugely sprayed before being put in a gas chamber for

ripening. Tofu is fermented. Fermented is not raw.

There are different solutions for each area. I can tell you about Brussels

but others in the forum will have better counsel for your area. For me it

is relatively easy as I simply visit the main fruit and vegetable market and

buy from the lorries that come mostly from southern Europe and North Africa.

if fermented is not raw, then why fermented (like rejuvelac) & cultured foods in

living/raw foods?

Tofu isn't fermented, but it isn't raw. It is made out of soymilk, which is

cooked, and then coagulated similar to cheese. I am guessing that the

aespetic packages go through even more processing.

I think if you eat the tofu right out of the package especially if

it's cold, it is " raw " , but if you cook it in a dish like Ma-Po Tofu

then it is considered to be " cooked " .

I like raw tofu -- I put grated ginger and a tiny bit of soy sauce

and a really tiny amount of sesame oil on top.

If anyone else has ideas about how to season raw / uncooked Tofu I'd

love to hear them.

Hope
