need recipe for raw salmon cakes please!

[is this something you could work with, Megan? Coat that mixture in a

cornmeal batter of some sort and fry lightly? Is there a raw sub for

mayo or is mayo raw (maybe that safflower type listed)? You could add

in some of that dill that you tasted and whatever other herbs and

spices. Google " mock salmon " and you will see a whole bunch of pates,

loaves, rolls and such, if you are interested (don't know if they are

raw or not). mmmm, makin me hungry.

Mock Salmon

4 C carrot pulp

(preferably from a juicer -

or buzzed in a food processor)

2 stalks celery, diced

1 small white onion, diced

(or 1 bunch scallions, diced)

1 C nonfat or light mayo

(try safflower mayo)

1 T dried kelp

(try health-food stores)

 

Those who own juicers are always looking for something creative to do

with the pulp and this recipe is just great - tastes even better than

real salmon.

 

If you do not have a juicer that separates out the pulp, you can try

buzzing up 5 to 6 good-size carrots in a food processor and then

squeezing out some of the juice.

 

Add the rest of the ingredients to the pulp, mix well, using

sufficient mayo to equal the consistency of your taste in tuna/salmon

salad. Serve just as you would salmon salad - on lettuce, in pita

bread, as a side dish or main course.

I have about 2-3 c. of leftover carrot pulp from juicing some carrots for

breakfast this morning. after having had " mock salmon " cakes from a local raw

cafe over the weekend, I am desirous to make my own. I could tell from what i

ate at the cafe, the salmon cakes had carrot and dill in them, but at the

moment, I can't find what i think might be a similar recipe searching on google.

yeah, that's ssomething i can work with. i have some homemade vegan mayo to use

up that would go perfect with that & a few recipe tweaks. :)
