Recipe for Cashew Butter

This is from Juliano's book, " Raw The Uncook Book " .

 

2 cups raw cashews.

1/2 cup fresh-squeezed orange juice, coconut water or fresh pressed apple juice.

 

Whip ingredients in a blender on the lowest speed until fluffy; add more liquid

if necessary to turn the nuts over.

Use liquid as sparingly as possible. Lasts in the refrigerator for a few weeks.

 

Makes 3 cups.

 

 

Okay, now here is how WE made it. For whatever reason, my daughter measured out

the 2 cups of cashews and then soaked them in water for 8 hours. I then drained

off the water and put the cashews in the blender along with 1/2 cup of freshly

squeezed apple juice and blended it, frequently scraping down the sides of the

blender, until it was very smooth. I'm not sure if because the nuts were soaked,

if it will still last a few weeks in the refrigerator, but I don't think it will

last that long anyway. It's really good!

Thanks for sharing that recipe. I am going to try it. One question

though, what do I try it on? lol I have never had any kind of nut butters

except peanut back when..

Thank you Mary Ellen! The grandkids are getting hubby abig batch of cashews for

his birthday so will make some.Will have to tell them " raw " though...

Hey there~

I buy raw cashew butter ( there are two at Wholefoods raw and roasted) ,and I

leave it out. Should I not be leaving it out of the fridge?

Hi Tone. Actually I could eat the whole lot with just a spoon (lol) but I used

it as a dip for apples and banana slices. My daughter spread it on bread with

honey and then she spread some on pancakes (not raw, I know). I imagine it would

also be good with celery, although I haven't tried that yet.

Before I became raw, I bought roasted almond butter and didn't refrigerate it,

and it seemed to be fine, but I think raw would need to be refrigerated. I keep

my raw nuts refrigerated because that's how they store them at my health food

store.

I rely on raw cashews probably too much. That's like an addictive

aspect, for me, of even eating raw. But let me not quibble, at least

not at this early stage of my raw food life. What would Dr. Graham

say?

Why did I just have the image of Homer Simpson with his head back and

the characteristic drool coming out the side of his mouth. Oh, I

know, I saw that word roasted.

 

I keep my raw nuts in the cabinet.

Thanks Mary Ellen. My supermarket carries raw almonds and cashews but they are

not refrigerated. It says raw but now I wonder..

No such thing as a raw cashew. They are heated out of their shell. The only

source for truly raw cashews is www.rawfood.com, and a few other raw site. They

put raw on the bins to distinguish the " raw " cashews from the roasted ones.

raw? You said no such thing as a raw cashew but then give sources for raw

cashews :) Headaches get me easily confused.

source for truly raw cashews is www.rawfood.com, and a few other raw site. They

Think they meant you can not get a truly raw cashew at the typical grocery

store...'raw' to grocery store would equate to not salted, not anything else,

but simply a 'plain' cashew.... however rawfood.com DOES have truly raw

cashews...labels in typical grocery stores can be confusing, as some are labeled

as vegan but then if you read the actual labels they contain gelatin or honey or

something which makes them non vegan...

" At what temperature do we process our Raw Nut and Seed butters? Generally

the nut and seed butters are ground at temperatures between 112 and 116

degrees. Occasionally the grinder might get as hot as 118 degrees, although

I've heard this but regular raw cashews taste bland enough to be a

raw food item and they don't upset my emotional/spiritual equilibrium

as to eating raw or not. In other words, I'm fine with them.

I've ordered their cashews, had to try them raw with skin on them.

The ones with the skin are terrible and bitter tasting. Get the ones that are

white and clean.

What health food store does that? I've heard you need a powerful

piece of equipment to crack the cashew shell, that's why I've never

seen a health food store sell them in the shell.
