Guest guest Posted May 14, 2004 Report Share Posted May 14, 2004 This is from Juliano's book, " Raw The Uncook Book " . 2 cups raw cashews. 1/2 cup fresh-squeezed orange juice, coconut water or fresh pressed apple juice. Whip ingredients in a blender on the lowest speed until fluffy; add more liquid if necessary to turn the nuts over. Use liquid as sparingly as possible. Lasts in the refrigerator for a few weeks. Makes 3 cups. Okay, now here is how WE made it. For whatever reason, my daughter measured out the 2 cups of cashews and then soaked them in water for 8 hours. I then drained off the water and put the cashews in the blender along with 1/2 cup of freshly squeezed apple juice and blended it, frequently scraping down the sides of the blender, until it was very smooth. I'm not sure if because the nuts were soaked, if it will still last a few weeks in the refrigerator, but I don't think it will last that long anyway. It's really good! My daughter spread it on bread with honey and then she spread some on pancakes (not raw, I know). I imagine it would also be good with celery, although I haven't tried that yet. I keep my raw nuts refrigerated because that's how they store them at my health food store. The only source for truly raw cashews is www.rawfood.com, and a few other raw site. They put raw on the bins to distinguish the " raw " cashews from the roasted ones. Have the best day ever! I've heard you need a powerful piece of equipment to crack the cashew shell, that's why I've never seen a health food store sell them in the shell.
