Namely " green beans " , " brussels sprouts " and " asparagus " . Does anybody eat these raw? And if so, how do you prepare them or do you just eat them " as is " ? I have always loved to eat these vegetables, but I have never eaten them in a raw state. My cravings for cooked food have been really bad today, but somehow I have gotten through. Guest guest Posted May 17, 2004 Report Share Posted May 17, 2004 Raw green beans have been a favorite of mine since childhood-my sibs and I would raid the garden as they emerged and feast on green beans, yellow beans, and peas-in addition to radishes, carrots, etc. Although an omnivore as a child and teen, I loved veggies and fruits and most I enjoyed in their natural state. Brussel Sprouts and asparagus, however, I have yet to try raw.hmmmm I, too, am just beginning the raw journey.with varying results. I have been vegetarian for over 16 years, mostly vegan, and over past 5 years have had gall bladder problems and acid reflux problems (even as a vegetarian, I am overweight since the birth of my first-now 18-and whenever I try to lose weight by cutting fats and calories, the gall bladder kicks in!). I am trying raw now, and love the foods, but have had some acid problems. I'm hoping the balance is restored through raw and I can get back to thin and healthy! I've heard of people eating green beans raw, but I don't like them. I have always LOVED raw green beans - the long ones you get in the produce section (not cut up like in the frozen section) - oh they are so good they don't even need dip, although my son likes to dip them. I always loved raw asparagus and was going to get some to put in my salads because I was sure it wouldn't be great raw - but it's GREAT raw, like carrot sticks. One of my favorites. I have not tried brussel sprouts yet in raw form, but you know I loved those cooked too so maybe I will do that the next trip to the store! I love it when I actually have something to contribute. Guest guest Posted May 17, 2004 Report Share Posted May 17, 2004 Hello Mary Ellen, I eat green beans and asparagus raw, haven't tried brussel sprouts that way, and I can't remember ever seeing brussel sprouts out on a food counter. It's just societal mores that makes it feel strange to eat such vegetables raw. It's easy to get used to if you feel you don't have any choice. I failed miseably over the weekend. Posted here a lot but I still wasn't raw. It's easier for me to start over on a Monday so I'm raw (orange, cucmber and banana so far today) so far today. Not really craving anything cooked, I should be able to muddle through and get my raw life going again. Never thought of eating broussel sprouts raw though. Green beans and string beans are the same thing? I've been eating those raw anyway for the past twentysomething years. Hope everyone is well.
