New Member/Recipe Request

Hello,

 

I have just joined this group, and am very happy to be here.

Currently, I am only about 70% raw, but have made it my New Year's

resolution to be 100% by January 1st. I teach a raw foods " cooking "

class at my local natural foods store and have had much success with

it.

 

I hate to start off with a request right away, but I am terribly

upset about a recipe I seem to have misplaced. It is for

mashed 'potatos' made from cauliflower. I only remember two

ingredients: cauliflower and lemon juice. Does anyone have a recipe

for this they could share? It would be most appreciated.

 

I am looking forward to getting to know you all!

Hi wendy! i have a receipe from Alissa Cohen's book:

 

2 c soaked cashews

2 c water

1 head cauliflower

1/4 med. onion

1 tsp olive oil

sea salt and pepper to taste

 

process all until well blended; should look a bit grainy, remove from

food processor and put in bowl. Enjoy!!

 

hope it helps and best of luck with your resolution. I am aiming for

100% as well!!! Where do you live?

Thank you! The recipe I had didn't have cashews in it, but this

sounds even better!

 

I live in Texas, near the Dallas/Fort Worth area.

 

Good luck with going 100% raw, too!
