Currently, I am only about 70% raw, but have made it my New Year's resolution to be 100% by January 1st. I teach a raw foods " cooking " class at my local natural foods store and have had much success with it. I hate to start off with a request right away, but I am terribly upset about a recipe I seem to have misplaced. It is for mashed 'potatos' made from cauliflower. I only remember two ingredients: cauliflower and lemon juice. Does anyone have a recipe for this they could share? It would be most appreciated. I am looking forward to getting to know you all! Guest guest Posted November 18, 2004 Report Share Posted November 18, 2004 Hi wendy! i have a receipe from Alissa Cohen's book: 2 c soaked cashews 2 c water 1 head cauliflower 1/4 med. onion 1 tsp olive oil sea salt and pepper to taste process all until well blended; should look a bit grainy, remove from food processor and put in bowl. I live in Texas, near the Dallas/Fort Worth area.
