I'm on a list that makes their own kimchi and such...they swear by the health benifits of this ancient food. I don't use them myself, since I do not like the fermented taste, and it does not sit well on my stomach. Some teachers have said that if you have a very clean raw diet or fruits, veggies, and a few nuts and seeds, you don't have to worry about supplying 'good bacteria' to your body; it will just come naturally as your body heals while eating raw foods. I think that probably fermented veggies are good to eat if you are on a cooked food diet and also eat meat. That they help digest these foods better. I'm finding that the less food prep I have to do, the happier I am, and the more time I get to spend doing other things (and my increasing energy helps there, as well! LOL).
