Chicken Scare

Uh, another tough day. Had a chicken scare, glad I didn't eat it.

The pain of getting raw is freaking me out. So what's on the menu

for everyone? I'll list what I bought from Costco the other day and

which I faithfully munch on. Avocadoes, broccoli, cherries, grapes,

tomatoes, spinach, raw almonds and pine nuts, asparagus, pineapple,

dates, bell pepper, cucumber, blueberries and lettuce. I have enough

food for at least a couple more weeks, if it stays fresh.

Rich, Sounds like you have some great food making stuff.

 

I've been on a pesto thing lately. I fill the food processor bowl

to the top with spinach leaves, add about 3-5 fresh large basil

leaves, scant 1/2 cup olive oil, cup of pinenuts, juice of 1/2 small

lemon, couple garlic cloves and about a 1/4 tsp of sea salt. Puree

the whole thing, then add a couple more handfuls of spinach leaves

(about fill up the container again), then puree again. Presto,

pesto. It is really good

 

I spread the pesto on romaine leaves, top with fresh made salsa

(spicy hot), fold up and eat ...

....or fill mushrooms with it

....or top shredded zucchini with it, with minced tomatoes over all.

viola, spaghetti.

....or dip carrot sticks in it and munch

....or just eat the stuff.

 

For your almonds and dates ... finely mince some of almonds. Then

take a couple dates, (pitted) and smash them into a soft

consistency, then form them into balls, roll in the chopped

almonds ... viola, candy.

 

Other than that, I dehydrate onion pieces coated with oil, salt,

garlic powder and chili pepper. Always have banana chips drying as

well. Very nice crunchy things.

 

Going to throw together a pumpkin pie filling fixture today - no

crust, going to eat it like pudding ... it is basically shredded

squash, dates, soaked almonds, pumpkin pie spices all pureed in the

vitamix.

 

But mainly I live on veg salads ... basically spinach with a few

other greens thrown in, whatever veges are in the house (always

avocado if I have it), and heaps of various sprouts -- topped with a

favorite dressing of the day. Today's dressing is tomatoes, red &

orange peppers, some basil, oregano, bit of lemon, flax oil, garlic,

pureed in the vitamix ... good stuff. sometimes I add water to thin

it out, sometimes not, depends on my mood.

Terry,

 

Thanks for your recipes, especially the pesto. It sounds really great!

 

Question for you -- how often do you eat something like pesto or one

of your other recipes, and what is your height and weight? If you

don't feel comfortable posting this here, I understand.

I just made a batch of pesto yesterday ... turned out really good.

I make it occasionally, maybe once every couple of weeks or so. I

pull recipes off the net or from books and like to try them for

evening food about once a week ... and if I like the recipe, then it

goes into a plastic sleeve into my binder so I can repeat it.

 

The pesto usually lasts me 2-3 days, then I'm on to something else

for a few days. During the work day I stick with spinach/greens

vege salad pretty much. I vary the kind of dressing I put on it. I

take fruit to snack on in the morning, and progress into veges in

the afternoon.

 

I have a recipe for pumpkin pie (that is wonderful). Yesterday I

made just the filling and put some of it in the dehydrator for

cookies ... tested them out tonight and they are great. If I add a

bit more ginger, they will be much like ginger snaps. Experimenting

with raw food stuff is fun!

 

I'm 5' 5-1/2 " tall. When I started on 100% in August of this year,

I weighed 135#. Now I weigh 108#. I would like to gain perhaps 5#

of that back, but we'll see what my body decides to do.

 

I feel great, have more energy than before, and am much more

healthy. I started on raw for health reasons, so it has certainly

worked for me.
