In order to process jarred food, doesn't it have to be heated? So, is the final product really raw? Almonds and sesamseeds are usualy roasted before they are grounded so to buy raw ones you should buy white tahini and white almond butter unless you are buying it from a spessial raw website. This is what I have been told here in Iceland, but I sometimes wonder how they make the almond white, because you have to put hot water on them to take the brown stuff off. So I am not sure but I always buy the white ones. I always buy raw nuts, so will try almond butter next. Yes, in order to get the skins off almonds, you do have to blanch them in hot water, so I tend to skip that step in recipes. It is the processing of the product in the jars that seems to me would render it not raw, as I assume there is a heat process going on there. I know that when I worked in a food co-op, our nut butters would come in huge plastic bins to be divided up that way, or already sealed in jars, but neither were heat processed. That's why they recommend refrigeration of the raw butters in particular; since they have not been heated, they can go rancid more quickly. My mother made a salad for dinner from my produce the other day, first time I've seen that. And she was snacking on carrots (and ahem, thousand island dressing) the other night, and I can't remember her eating produce like that before either. I think our sunshiny personalities are an attraction for others to dabble in what we're doing. Normally our local HFS charges nearly 15.00 for a 16 oz jar of raw, and places it on sale for 10.00. Can't afford that!
