Raw Tahini / Almond Butter question

Hi

In the past, I have purchased " raw " tahini and " raw " almond butter

in jars from the organic foodstore.

In order to process jarred food, doesn't it have to be heated? So,

is the final product really raw?

Curious as to everyone's opinion on this.

thanks

Hi Terry

well honey is naturaly raw, it is sometimes heated because than it is easier

to put it in to jars.

Almonds and sesamseeds are usualy roasted before they are grounded so to buy

raw ones you should buy white tahini and white almond butter unless you are

buying it from a spessial raw website.

This is what I have been told here in Iceland, but I sometimes wonder how

they make the almond white, because you have to put hot water on them to

take the brown stuff off. So I am not sure but I always buy the white ones.

Hope this will Help

Best regards

Thanks for the input Maria

I obtained a few pounds of raw peanuts, and have made peanut

butter. I always buy raw nuts, so will try almond butter next.

Yes, in order to get the skins off almonds, you do have to blanch

them in hot water, so I tend to skip that step in recipes.

It is the processing of the product in the jars that seems to me

would render it not raw, as I assume there is a heat process going

on there. True for honey, you have to find the product that is not

heat processed -- but my partner can't have honey, so I tend to stay

away from it anyway so he can enjoy my raw food creations.

cheers

Hi, Terry, just a quick note to say nut butters don't have to be heat processed.

I know that when I worked in a food co-op, our nut butters would come in huge

plastic bins to be divided up that way, or already sealed in jars, but neither

were heat processed. That's why they recommend refrigeration of the raw butters

in particular; since they have not been heated, they can go rancid more quickly.

Peace,

Valerie

I like raw peanuts and almonds. Simplier is better imho, the less

heat processing of any kind is for me. Nice of you to share your raw

food creations with your partner.

Thank Valerie. I've used up my stock of raw peanuts and almonds. I

may purchase a 'ready-made' jar at the local whole foods store.

At Wed, 5 Jan 2005 it looks like Valerie Mills Daly composed:

I just bought a 16-oz jar of " raw " almond butter from

Trader-Joes tonight. It's expensive compared to the other

processed butter.

16-oz = $8.00

Yes, if we stay devoted to the diet the people around us gravitate a

little towards our way of eating (whether they're conscious of it or

not). My mother made a salad for dinner from my produce the other

day, first time I've seen that. And she was snacking on carrots (and

ahem, thousand island dressing) the other night, and I can't remember

her eating produce like that before either. I think our sunshiny

personalities are an attraction for others to dabble in what we're

doing.

I get mine through a food co-op, and I buy it a case at a time, so it averages

about 5 dollars a jar. Normally our local HFS charges nearly 15.00 for a 16 oz

jar of raw, and places it on sale for 10.00. Can't afford that!

Valerie

I love the assortment of raw nuts at Trader-Joes. I hope to get

there this weekend and stock up.
