My transistion to crudivorism is going reasonably smoothly, but I have yet to embrace the notion that I must presoak seeds and nuts before eating them. Even though I read more and more that fats should be eaten sparingly, I continue to depend on them at every meal for their powers of satiation. However, I never soak them. I have certainly tried soaked nuts, but guess what? They are, well, horrible. I can't think of a better way to transform a nice almond into something terrible than by soaking it overnight. They become watery and soft and the flavor changes considerably. Not tasty! For the record, I eat only raw nuts and seeds, with almonds, brazil nuts, cashews, pistachios and filberts seeing the heaviest rotation. I sometimes in coconuts as well. As for seeds, I guess I eat mainly pepitas and sunnies. I eat as many as 150g fat/day with all these nuts, yet I am rail thin. Hence, I wonder if the natural enzyme inhibitors within these fine nuts is rendering them much less caloric than I imagine. What has been your experience? Thanks for reading! I don't soak nuts, I just eat them as they are. I figure that's the best way to go, I hope I live through it. I don't eat a lot of fats, a couple avocados a day, a couple handful of nuts. Nice rotation of nuts you have there, pretty much mine, raw macadamias are good too. I'm pretty thin and getting back to real thin by staying raw. I remember being about 145 at 5'10 " a while back when I was consecutively raw for a while. " I think nuts run through us pretty easily though, they don't seem to get much digested. This is why I don't think they're the best food choice, but I have to have something to munch on to get me through my aggravation at being raw. Thanks for writing. Here are some thoughts on nuts and digestion: I think soaking is best for digestion and breaking down of the particles in the intestines...and I like to mix my soaked or sprouted nuts and seeds in with other recipes to make both the other foods and the nuts/seeds taste better. Mixing in the food processor in these recipes blends the nuts so they are more digestible than just the chunks that our teeth can grind even with great chew effort. I think otherwise the nut chunks just go through the body not giving nutrition, or can get caught in hidden in the intestines too long and cause possible fermentation. Does that make sense? And I'm having a lot of fun along with a lot of detox pain.
