Hi Trivia,

I found the pumkin pie that Linda made on the rawseattle.org website recipe

page.

That was a delicious pie! Lily, my 5 year old, loves that pie and sill

talks about it. I am making that pie for the first time tonight and it's

going well.

It was nice to meet you and I hope you and your goats are doing great.

It may be a while till my next recipe book, so in

the mean time enjoy my pumpkin pie recipe (one of

the pies at Linda's potluck.)

Jeff

Crust:

2 cups soaked/dehydrated almonds.

1/2 cup raw organic dates

1/8 tsp sea salt

Grind up ingredients in a food processor. Press

it into a pie plate. Optional - Dehydrate

overnight (about 100 degrees 12 hours)

Filling:

4 cups fresh organic pumpkin (no seeds or skin)

1 cup fresh coconut cream/milk (juiced from fresh

mature coconut meat and coco water)

1 cup raw org. dates

1 tbsp organic ginger juice (otherwise, fresh grated ginger)

1 vanilla bean (seeds only, no pod)

1/2 tsp nutmeg

1/4 tsp cinnamon

1/4 tsp cloves

1/8 tsp allspice

Combine all ingredients in a food processor and

process till smooth. Pour into your pie crust and

chill. Enjoy!

I think she just put bananas on the bottom instead of walnut crust. Is that

the one you are talking about? Mine came out the same. I made it with the

walnut crust.
