Guest guest Posted July 19, 2005 Report Share Posted July 19, 2005 Most recipes call it " nut cheese " but it is so soft, especially when it is just starting to turn, that I think of it more as nut based sour cream or yogurt. Basically you soak some nuts, add just enough water so you can turn them into a paste in the blender, pour it into a bowl, and wait for it to go sour. This will happen in a few days even in the refrigerator, and happens much faster at room temperature. Adding the nut cream, fresh or soured, to a bowl of chopped up fruit is so filling and so delicious that I'm eating enough of it to start gaining back some of the weight I lost last winter when I was sick. In my case this is good because I was on the thin side, and then lost even more weight. Since I am not completely raw - yet- I am having a hard time loosing it. So maybe this isn't such a good alternative. I would be having it once per day - would that make a differnce?
