The health food shop in Kent at 108th and Kent-Kangley Rd. keeps all of their nuts in the cooler at all times. I know it's a bit of a drive from Seattle, but here's the contact info in case you don't find anything closer. Marlene's Market in Tacoma actually has a separate refrigerated room with lots of bulk items. Nice feature, but kind of rare.
