Guest guest Posted October 15, 2006 Report Share Posted October 15, 2006 I went to Madison Market and got a jar of Raw Coconut Dream by Living Tree Community which I just opened and it is sooo good! My question is.... It doesn't say to refigerate after opening but it seems to me that I should. So should I refigerate it? I also got Tahini and Raw Olives by Living Tree brand and on those jars they clearly stated to refrigerate after opening, but not on the coconut. I just bought this one on a lark and it totally surprised me how much I do like it. And it is 32 servings so I don't need any more for a while. I really don't know what I am going to do with it ... LOL ... I just took a teaspoon and tasted it, then put a few chocolate nibs with it. I have heard that coconut is good for us and the one time I hacked my way into a fresh coconut I didn't care for the taste or the texture. Do you like the taste of fresh coconut? Sometimes they are borderline, but when they are good they are very, very good. I'd rather eat the fresh than the stuff in the jar. I got the coconut in a jar at whole foods, they store it in the fridge but it says on the jar you don't have to keep it in the fridge. As a good saturated fat it is highly resistant to oxidation and spoilage (unless it is a fresh coconut). So either way is probably ok. You can put it in a smoothie, it's good for you in all it's forms or just use it on your skin. The daily dose of MCFAs (medium chain fatty acids, which the body converts into energy not fat) recommended for adults is 31/2 tablespoons 1-2 still has benefits. Hope this helps a bit.
