I can't eat the ones with all those hot spices in them, although a bit of thyme is okay. I can't digest the green ones or the dried ones. Mostly what there seems to be are the Botija/Botilla olives, and lots of green ones, spiced ones, or very bitter ones which were just dried and salted. Mostly the organic olives come in very tiny very expensive jars. When I was in California I found a jar of organic Black Farga olives for $10 for a 14 oz jar by weight. I really liked those and would be happy to buy a gallon jar - if I could find them. I think I really need black olives (not olive oil) in my diet, but can't find what I need, so I'm hoping for some leads here. I get by with the unspiced Botija/Botilla olives, but I think the black ones are better for me, and so I keep looking. I've spent hours on the internet searching, didn't find anything, and have seen those web sites before. One only delivers in south Florida, and the other 2 only sell Botilla (a purple olive), green, and dried olives Maybe I should have said black/brown olives because after being cured for many months, the ripe black olives sometimes get brownish. Drying seems to do something irreversible to food unless its something you can sprout or germinate. The dried food I can eat I have to put into a blender even after its soaked, and even then there is some dried food I can't digest that I can eat when its fresh and live - its like drying hardens the cell walls or something. Blending doesn't seem to help olives enough, and they have such a strong taste they kind of overwhelm the smoothie anyway. So that's why I'm looking for some black brine cured olives with nothing but salt added (or maybe a bit of added thyme).
