I'm sorry I haven't been more forthcoming with posting recipes...

I've been pretty busy the last few weeks... I'll see if I can't get

something posted up here soon... *smile*

Breakfast in a glass smoothie

 

3/4 C frozen peaches

1/2 fresh mango

1/2 ripe banana

1/2 C silken tofu or yogurt (plain or vanilla)

1/4 C orange juice

 

Chop peaches in blender. Peel & slice mango into small chunks. Add to

blender, along with chopped up banana. Blend again. Add tofu/yogurt &

orange juice. Blend until smooth. Enjoy!

Vegetarian " Cheesesteak "

Ingredients:

thinly sliced Portabella mushrooms (approx. one per

sandwich)

1/2 tsp Olive oil

thinly sliced onion and green bell pepper to taste

a few slices of a good, hard cheese (cheddar or

colby; vegans should use

VeganRella)

six-inch sandwich roll

 

Fry mushrooms in large frying pan or restaurant style grill in the oil,

chopping it all up with spatula as you cook. Add the onion & green pepper,

cook to your preference. Mound everything into a shape slightly smaller

than your roll. Add a slice of cheese on top & let it melt. Serve on roll.

Vegan burritos

Serves 4-5.

 

1/2 block firm tofu

1/2 green or red pepper

1 small or med onion

1 C fresh or frozen corn

3 cloves garlic

1 yellow squash

1 Tbsp olive oil

package flour tortillas

1 jar salsa

salt & pepper to taste

 

Chop up the onion, pepper & squash and mince the garlic. Put oil in large

frying pan and heat on med-high heat. Add the tofu, chopping & scrambling

as it cooks. Cook approx. 3-4 min., then add veggies & saute another 5 min.

Add salt & pepper to taste. Heat up tortillas, fill with veggies & top with

salsa. Serve & enjoy!

Mexicali Rice & Beans

(Serves 4-6)

 

2 C uncooked rice

2 C V8

2 C water

15 oz can black beans

2 C corn (or 15 oz can)

1/2 C salsa

1/2 fresh tomato

1/2 tsp cumin

1/2 tsp chili powder

tortilla chips

 

Bring V8 & water to boil. Add rice and cumin & chili powder. Bring back to

boil, reduce heat to med., cover and cook. After 5 min., add black beans.

Wait another 5 min., add corn & salsa. Chop up tomato & add when rice is

just about done (about 5-8 minutes more). Crumble tortilla chips on top &

serve.

Pasta with Tomatoes & Artichoke Hearts

(Serves 4-6)

 

1 med. jar marinated artichoke hearts

1/2 C chopped yellow onion

2 cloves garlic, minced

1 can 15 oz italian style stewed tomatoes

1 C dry rotini pasta

 

Pour small amount (1-2 tsp) oil from artichoke hearts into large skillet.

Heat on med-high. Add onion & garlic, cooking until onion is translucent.

Add stewed tomatoes and artichokes (with remaining liquid). Bring to boil,

add pasta. Reduce heat, simmer 8-10 min. until pasta is tender.

Thai Soup

(Serves 2-4)

 

1 shallot, chopped

2 Tbsp chopped fresh ginger

1 tsp peanut oil

1 clove garlic, minced

1 can veggie broth

1 can coconut milk

1/4 C chopped fresh cilantro

juice of 1 lemon

few drops chili sauce

2 Tbsp soy sauce

1/2 C fresh spinach

1/2 C black mushrooms

 

Saute shallot, ginger, garlic in 1 tsp peanut oil. Add veg. broth & coconut

milk, bringing to boil. Reduce heat to simmer. Add remaining ingredients,

except spinach & simmer 3-4 min. Add spinach & cook until wilted (1-2

minutes). Serve with rice.

I wanted to thank cdpietro for the great spincah rice soup. i made it last

night for myself and I have a healthy dinner now for the rest of the week

(that recipe made alot!!)

I am starting to get tired of the same thing for dinner, lunch, and breakfast everyday. Carrots, Almonds, Coconuts, Avocados, Bananas, oat groats etc............ I have been eating almond patties every night for dinner. If I don't eat patties I make a large salad. Does anyone have some quick, simple, easy to prepare recipes? I have made a few from the website. A big issue I am having is finding all the ingredients for the larger recipes. I am not sure what I am doing yet, but I am learning a great deal.
