Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Breakfast in a glass smoothie 3/4 C frozen peaches 1/2 fresh mango 1/2 ripe banana 1/2 C silken tofu or yogurt (plain or vanilla) 1/4 C orange juice Chop peaches in blender. Peel & slice mango into small chunks. Add to blender, along with chopped up banana. Blend again. Add tofu/yogurt & orange juice. Blend until smooth. Enjoy! Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Vegetarian " Cheesesteak " Ingredients: thinly sliced Portabella mushrooms (approx. one per sandwich) 1/2 tsp Olive oil thinly sliced onion and green bell pepper to taste a few slices of a good, hard cheese (cheddar or colby; vegans should use VeganRella) six-inch sandwich roll Fry mushrooms in large frying pan or restaurant style grill in the oil, chopping it all up with spatula as you cook. Add the onion & green pepper, cook to your preference. Mound everything into a shape slightly smaller than your roll. Add a slice of cheese on top & let it melt. Serve on roll. Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Vegan burritos Serves 4-5. 1/2 block firm tofu 1/2 green or red pepper 1 small or med onion 1 C fresh or frozen corn 3 cloves garlic 1 yellow squash 1 Tbsp olive oil package flour tortillas 1 jar salsa salt & pepper to taste Chop up the onion, pepper & squash and mince the garlic. Put oil in large frying pan and heat on med-high heat. Add the tofu, chopping & scrambling as it cooks. Cook approx. 3-4 min., then add veggies & saute another 5 min. Add salt & pepper to taste. Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Mexicali Rice & Beans (Serves 4-6) 2 C uncooked rice 2 C V8 2 C water 15 oz can black beans 2 C corn (or 15 oz can) 1/2 C salsa 1/2 fresh tomato 1/2 tsp cumin 1/2 tsp chili powder tortilla chips Bring V8 & water to boil. Add rice and cumin & chili powder. Bring back to boil, reduce heat to med., cover and cook. After 5 min., add black beans. Wait another 5 min., add corn & salsa. Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Pasta with Tomatoes & Artichoke Hearts (Serves 4-6) 1 med. jar marinated artichoke hearts 1/2 C chopped yellow onion 2 cloves garlic, minced 1 can 15 oz italian style stewed tomatoes 1 C dry rotini pasta Pour small amount (1-2 tsp) oil from artichoke hearts into large skillet. Heat on med-high. Add onion & garlic, cooking until onion is translucent. Add stewed tomatoes and artichokes (with remaining liquid). Bring to boil, add pasta. Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Thai Soup (Serves 2-4) 1 shallot, chopped 2 Tbsp chopped fresh ginger 1 tsp peanut oil 1 clove garlic, minced 1 can veggie broth 1 can coconut milk 1/4 C chopped fresh cilantro juice of 1 lemon few drops chili sauce 2 Tbsp soy sauce 1/2 C fresh spinach 1/2 C black mushrooms Saute shallot, ginger, garlic in 1 tsp peanut oil. Add veg. broth & coconut milk, bringing to boil. Reduce heat to simmer. Add remaining ingredients, except spinach & simmer 3-4 min. Add spinach & cook until wilted (1-2 minutes). Serve with rice. Carrots, Almonds, Coconuts, Avocados, Bananas, oat groats etc............ I have been eating almond patties every night for dinner. If I don't eat patties I make a large salad. Does anyone have some quick, simple, easy to prepare recipes? I have made a few from the website. A big issue I am having is finding all the ingredients for the larger recipes. I am not sure what I am doing yet, but I am learning a great deal.
