Guest guest Posted October 17, 2002 Report Share Posted October 17, 2002 I don't have much time to cook and was getting bored with my normal standby's when I saw a squash display in a local grocery store. It is almost Thanksgiving here in the states and they were putting out some of the traditional squashes and Indian corn. I have seen similar displays every year. The difference was the this year, each type of squash was labeled and had cooking instructions as well the the type of recipe it could be use in. Do you know I never knew you could eat them. I thought they were just for decoration. Tonight I tried Baby Kuri (small hubbard squash). It was large, hard, and dense. The inside was orange and very firm with some seeds and stringy(but not wet) pulp in the middle. The instructions said "Microwave Instructions - Cut into pieces, place in dish, cover. Cook until tender, 15 minutes or more. Scoop out pulp, season to taste. Can also be used in pies and purees." To be honest, it tasted great without anything else but with a little orange juice it was wonderful. It reminded me of a cross between sweet potatoes and pumpkin pie. Has anyone else had any experience with squash? I can't believe I have missed this whole food group my whole life. I always just bought them to decorate with mostly b/c I never really knew how to cook them. *lol* I wish my market would do that. I am kind of chatty with the produce workers since veggies are my thing, so I will suggest it to them as an idea. Maybe they will pick up on it next year. I julienned mine with some red apple, avocado, a little cumin and a small amount of dressing (a dressing that had a shot of Braggs Aminos in it for kick)The only thing close to having a raw casserole I have ever made was when I sliced squash and onions thinly and layered them with a generous brush of olive oil and sea salt and pepper between each layer. It was a while back but I think I used a sweeter Vidalia or yellow type onion. And then I put in the dehydrator and before eating I sprinkled on some cashew Parmesan cheese and sliced green onions for color. Oh yeah, another time, I made some squash and served it with a quick drizzling sauce I made in the blender with tomatoes, sun-dried tomatoes, basil, oregano and lots of garlic.
