to a certain temperature?? Beats me. He is whacked - love him to death. I

roast them. ;) Cut them in 1/2, scrape out the prickly stuff, trim the leaves,

douse w/olive oil & in the go 350F for 45 mins or so until tender & browned.

Sprinkle w/kosher salt & mmmmmmmmmmmmm.

He is such a gadget-head lol but I like his show. When I steam mine

I do them in a couple of inches of water until a leaf pulls out

easily. Smaller (fist size) chokes cook faster, usually 20-30

minutes, larger chokes (double fist size) about 45 minutes.

Never tried them roasted; sounds very interesting!!

 

It's about the same for steaming, except you don't cut in half.

However, if you use a pressure cooker they're done in 15-20 minutes

minutes rather than 45.

Great question!But I would say that artichokes in a jar are Not raw. Unless it is dried, raw foods really don't have a shelf life. Any other opinions?BTW I was busted about my chocolate comment. I wouldn't think so Nancy. To me, they seem to have been at least

steamed and accompanied by some form of preservative. Artichokes have

always interested me and I agonized over how to prepare them for raw

consumption. They are just too tough for me in their natural state.

 

I'd appreciate a raw recipe for them myself.

Celebrate spring with an artichoke salad

Fresh (uncooked) artichokes, trimmed down to the tenderest part of

leaves, heart, and stem, are thinly sliced into a salad with lettuce, tomato,

cucumber, and spring onions. A handful of Greek olives, olive oil, and lemon

juice add the finishing touch to this elegant salad.

Prep

Time: 20 minutes

Ingredients:

·

2 fresh artichokes

·

2 lemons

·

juice of 2 lemons

·

1 teaspoon of sea salt

·

1 tomato, cut in chunks

·

1 small cucumber, peeled and

sliced

·

4 leaves of Romaine lettuce,

washed, dried, and shredded

·

1 large spring onion, trimmed,

washed, sliced

·

extra virgin olive oil

Preparation:

Trim off all but 1 inch of the artichoke stem. Trim off outer green

leaves, leaving internal yellow leaves. Trim off top 1/2 to 1 inch of the

leaves with needles. Cut artichokes in half to reveal the choke. Cut in half

again. Rub each piece with lemon. With a sharp knife, cut out choke and

discard. Cut artichoke into long very thin slices, place in a bowl and sprinkle

with lemon juice. Toss to coat well.

Sprinkle the tomato and cucumber with salt and place in a large salad

bowl. Add lettuce, spring onions, and artichoke slices, along with a little

lemon juice from the bowl. Add 1 tablespoon of olive oil, toss, and taste. If

the taste is too lemony, add a little more oil. Toss in a handful of green

Greek olives, and serve.

Does anyone who knows how to prepare the artichoke

as described below have a camera or video that they might

capture the process cause I am still not sure how to do

all that is described in this recipe. I need Artichoke prep for dummies :-)
