The insulin goes into the bloodstream, binds with the sugar molecule, escorts it out of the bloodstream into your muscles where the mitochondria convert it into energy for your muscles. What do we know about fat? It's a great insulator!So when you eat fat and sweet together what happens is: your brain sends a message to the pancreas to produce insulin. It makes a bunch which goes into the bloodstream but cannot bind with the sugar because the sugar is insulated. So the brain keeps telling the pancreas " make more insulin " and it does and gets burned out. Your blood sugar stays high because the sugar can't get out of the bloodstream (efficiently). Guess what else...when sugar stays in our system too long it gets converted to....fat!Separating sweets and fat is the other big secret to losing weight. Whenever I meet someone who has been raw for a long time and is overweight and says they just can't lose weight...there are three reasons: bad food combining and/or too much fat in the diet and/or too much food period. Keep food combining simple:fruit alonegreens go with everythingKeep eating simple:always soak your nuts and use them as part of a recipe (not a snack)keep your fat to 10% -- this may differ for people with extremely high metabolisms, those who are underweight, or have other specific medical issues. My experience with clients who are pre-diabetic (and I'm seeing a lot of them lately) - when they lower their fat and watch the food combining, things get back to " normal " and their blood sugar comes back into reasonable range. Bear in mind that it takes 6-9 hours, usually, for fats to digest. So timing is key.Hope this helps,greens and hugs,Sharon PS - I haven't made coconut yogurt, but that would be pretty high fat.
