Guest guest Posted October 4, 2002 Report Share Posted October 4, 2002 Hi everyone. Last night I tried that recipe for pasta and lentil soup that is in the files section. I couldn't find " red lentils " so I used orange colored ones. Mmmmmm, it was so good. Kind of made alot though, but I am going to have some for lunch today. I served it with some crusty Italian garlic bread. I must be in a very domestic mood b/c I also baked some of those almond poppyseed muffins. This is the second time I have done that recipe. Even though my daughter likes it, I am not quite satisfied with it. For one thing, the recipe only calls for 1/2 tsp of almond extract; hardly seemed enough last time. So this time I put in 1 tsp almond extract and 1/2 tsp vanilla. But still... something is off IMO. I think it might be b/c the recipe has 1-1/2 cups vegetable oil. That seems like alot and , well, oily. Next time I might use some butter, or maybe I will just ditch this recipe and look for another better one for almond poppyseed muffins. Do any of you have ideas for how to fix it, or a better recipe? Hey, hope you all have a great friday. Guest guest Posted October 4, 2002 Report Share Posted October 4, 2002 Maybe it was a typo and should have been 1 1/2 Tbsp oil. I've never heard of that much oil for any baking recipe. Try with only 1 1/2 Tbsp. If that doesn't work, add some applesauce to it the following time. Applesauce, I believe, acts the same way as butter for baking. Good luck! Guest guest Posted October 4, 2002 Report Share Posted October 4, 2002 Kansas is getting better for veggie now. I grew up there and went to K-State where I met my first veggie. Strangest man alive. Or, I thought so then. Two years later, I was mainly veg... go figure. The only great thing now is the internet. Even if you live in h@#$ in west Kansas you can still mail order stuff. But, Wichita, Manhattan, Lawrence... things are getting better there. The good thing is that it is becoming medically OK to eat veg, so folks like my parents are more OK with it now than before. I still eat meat when I go home just to make things easier (besides, who doesn't crave the bad for you food your mom used to make?) but I also introduce them to new foods like my arichoke hummus wraps and other things... I'm studying this weekend and maybe adopting out some of the dogs in the program I volunteer with and beyond that... may try to perfect my bloody mary recipe. Last night was my first and I used a V-8... not so good. Try until it's right. I use Clamato juice (would never drink it alone, but with vodka...ooh baby). V-8 is too thick. Of course, if you're strict veggie, clamato is out b/c of the clam juice. So, dilute the V-8 before pouring in glass. Use fresh horseradish and worcesteshire (or the veggie equivalent). Also, a great bloody mary is one you can literally eat --- be generous with the pickled veggies (garlic & jalapeno stuffed olives, okra, etc). Pickled okra is a real treat in this beverage. Mix and mingle those flavors - you'll find a groovy balance you'll get addicted to eventually. Plenty of salt and pepper and whooodoggie!! I'm salavating over here just thinkin' bout it:) I'm jealous, if I weren't breastfeeding, I'd be making some too. I love a virgin V-8 (well I like it loaded alot better) with a touch of worcesteshire, tabasco and salt. It must be ice cold. I gives a nice little vitamin kick in the mornings. I lived in Manhattan for a long time. My kids went back to visit last summer and said Dillons had Morningstar meat substitute products, so times are changing there. Good luck with the Bloody Marys.
